Gastrointestinal Digestion: Marta Martínez-Sanz Shares Structural Approaches to Food Science at KTH
KTH recently hosted renowned researcher Marta Martínez-Sanz from CSIC, the Spanish National Research Council, who presented her latest insights on food structure and digestibility. Her talk covered innovative approaches to sustainable protein resources and digestive processes.
On Monday, October 21st, KTH welcomed researcher Marta Martínez-Sanz from CSIC in Spain. An ERC Consolidator Grant recipient and National Research Award for Young Scientists winner, Martínez-Sanz held a lunch seminar in AlbaNova during her visit. In her presentation, called “Insights on the Gastrointestinal Digestion of Food from a Mechanistic and Structural Perspective”, she shared her work on food structure, digestibility, and sustainable protein resources.
Marta Martínez-Sanz is a Principal Investigator in the research group Food Proteins in the Research Institute for Food Science (CIAL, CSIC-UAM) in Madrid, Spain. Her scientific interests focus on the multi-scale structural study of different biomass sources and their correlation with functional properties to develop strategies aimed at a more efficient use of natural resources in food. She also explores polysaccharide-protein interactions to modulate gastrointestinal digestibility, generating products of interest for food and pharmaceutical applications, enabling the valorisation of new alternative protein sources.
